Letti's Shu Mai

Post by wd » May 10th, 2010, 11:10 am

Shu Mai
got this mix from a friend I usually make a big batch and freeze it good eats ready in about 18 minutes straight out of the freezer
goes faster with a food processor otherwise a lot of work :)

1lb of each Ground Chicken, Ground Pork, Ground Turkey, Chopped raw shrimp

to taste dried mushrooms (soaked over night) regular rooms will do and chopped carrots

2 tablespoons sesame oil
2 tablespoons corn starch
salt and pepper to taste

Mix all well and make into small meatballs and wrap in dumpling wrappers (buy the wrappers it's faster and they are cheap)
I can put them directly from the freezer into the already boiling steamer for 18 minutes and they are done

Dipping Sauce (adjust to your taste but start here & holds up well in the frige when sealed)

1/2 cup low sodium Soy
1/2 cup white wine vinegar
1/2 cup dry red wine (do not use cooking wine it will just add more salt)
4 tsp Ginger
2 tsp garlic powder
4 tsp chinese mustard mor if you want it hotter
1/4 tsp tobasco
1/2cupsugar
juice of one lime
1 tsp sesame Oil
Handful of chopped chives
Mix well :)
